4 ripe bananas
2/3 cup sugar
90 g (3 oz) butter
¼ cup lemon juice
1 tablespoon grated lemon rind
½ cup orange juice
Peel bananas, chop roughly and place in a food processor and process until smooth.
Place mashed bananas, sugar, beaten eggs, chopped butter, strained lemon juice, lemon rind and strained orange juice into the top of double saucepan over simmering water.
Stir until mixture thickly coats the back of a wooden spoon. Pour into hot sterilized jars; seal.
Store in refrigerator. Makes approximately 3½ cups.
