Cream Cheese Icing
1/2 cup of butter (slightly softened)
8 oz. Cream Cheese (softened) Don’t use light cream cheese
4 cups of icing sugar
1 tbs. Milk
Using a food processor cream butter and cream cheese on med. speed till smooth.
Add milk then icing sugar 1 cup at a time. When all icing sugar is added mix on
high speed for 30 sec. to 1 minute.
Can be stored in an airtight container in fridge up to 2 weeks or for longer periods in the freezer for the next baking.
Great icing for Carrot Cakes as well as the Banana Date and Walnut Bread
* If icing is too thin add a little milk. * To stiffen icing add a little more icing sugar.
I use lemon juice in place of the milk for the flourless orange cake.
This is enough to ice two Flourless Orange cakes. Make in full and freeze half or simply freeze ½ a packet of cream cheese and make the other icing later. This icing can be used for the Banana, Walnut, Date cake and a Carrot Cake.
