Outback Damper Cake
Damper originated with the early pioneer … flour and water
was mixed into a dough and wrapped around a stick taken
from the Eucalyptus Tree, it was then held out over the
campfire to cook, the damper was cooked when it slid off
the stick. Years passed, and other additions were made,
such as jam and cream, or butter, added after they
were cooked.
More time passed and damper cakes were made with fruit
and cooked in camp ovens in the earth. Although this cake
has not been cooked in the earth, it is a reminder of one of
the great outback traditions.
